Crémant de Bourgogne Blanc de Noirs | Rounded elegance A pure expression of Pinot Noir, Dessus les Vermots 2005 is a careful blend of wines from the same plot, a proportion of which was aged in oak barrels. It is characterized by its finesse, and makes a perfect accompaniment for both traditional and more exotic dishes. The winemaker’s savoir-faire, and the absence of any dosage to produce a “brut nature”, result in a subtle aromatic palette, allowing the wine to affirm its personality with the utmost authenticity. A Crémant de Bourgogne all about harmony. A deep grayish-yellow with a golden tinge, the nose is complex, with heady aromas of honey, redcurrant and cherry, topped off with lightly toasted and buttery notes. In the mouth, the Pinot Noir comes through yet remains delicate. The attack is suave, with a velvety freshness, and a rounded, long finish allowing its pleasant balance of flavors to be fully appreciated. Authentic dishes: Traditional cuisine, or sweet-and-sour combinations. The 2005 vintage was an ideal year for the vines. After a fairly mild winter, spring fluctuated between rain and warm weather, followed by drought and a north wind which resulted in healthy grapes that produced fine and very fruity juice. The grapes came from a small plot called Dessus les Vermots, located over a rocky limestone vein in the village of Savigny-lès-Beaune. This blanc de noirs Crémant de Bourgogne is a careful blend, with 20% of the wine matured in oak barrels before ageing in bottles for eight years without dosage.
